Narikol ladu recipe (Coconut ladoo)

 


Narikolor ladu, also known as nariyal laddu or coconut laddu is a delicious and easy dessert made with coconut, sugar and cardamom. It is a popular sweet dish in Assam, especially during festivals and celebrations. Narikolor ladu can be prepared in less than 30 minutes and stored for up to a week in an airtight container. Here is how to make narikolor ladu with sugar at home.

Ingredients:

- 2 cups of grated coconut (fresh, frozen or desiccated)
- 1 cup of sugar
- 1/4 teaspoon of cardamom powder
- A few drops of ghee or oil for greasing
- 2 tablespoons of milk (optional)

Instructions:

1. If using fresh or frozen coconut, dry roast it in a pan over low heat until slightly golden and aromatic. If using desiccated coconut, skip this step.
2. In another pan, heat sugar with 1/4 cup of water over medium heat until it dissolves and forms a thick syrup. You can check the consistency by dropping a little syrup in a bowl of water. It should form a soft ball when rolled between your fingers.
3. Add the roasted coconut and cardamom powder to the syrup and mix well. Cook for a few minutes, stirring continuously, until the mixture leaves the sides of the pan and forms a thick mass. You can add some milk if the mixture is too dry or crumbly.
4. Turn off the heat and let the mixture cool slightly. Grease your palms with some ghee or oil and shape the mixture into small balls. You can also roll them in some desiccated coconut for extra texture and flavor.
5. Enjoy your narikolor laddu as a snack or dessert. You can store them in an airtight container for up to a week in the refrigerator.
