Patot diya khoru maas is a traditional Assamese dish of steamed fish wrapped in banana leaves. It is a healthy and delicious way of cooking fish with minimal oil and spices. The banana leaves impart a subtle aroma and flavor to the fish, while keeping it moist and tender. Patot diya khoru maas can be made with any small fish, such as horu maas, mua maas, dorikona, etc. It is usually served with hot steamed rice and a tangy chutney.

Ingredients:
- 500 grams of small fish, cleaned and washed
- 1/4 teaspoon of turmeric powder
- Salt to taste
- 2 tablespoons of mustard oil
- 4-5 green chilies, slit
- A few curry leaves
- 4 banana leaves, washed and wiped dry
Method:
1. Marinate the fish with turmeric powder and salt for 10 minutes.
2. Heat a pan and add the mustard oil. When the oil is hot, add the green chilies and curry leaves and fry for a few seconds.
3. Turn off the heat and let the oil cool slightly.
4. Cut the banana leaves into large squares, enough to wrap the fish pieces.
5. Place a banana leaf on a flat surface and brush some oil on it.
6. Place some fish pieces on the leaf and drizzle some more oil over them.
7. Fold the leaf over the fish and secure the edges with toothpicks or string.
8. Repeat with the remaining fish and banana leaves.
9. Steam the fish parcels in a steamer or pressure cooker for 15 to 20 minutes, or until the fish is cooked through.
10. Carefully unwrap the parcels and serve hot with rice and chutney.
