Assamese style duck curry recipe

Ingredients:

- 1 kg duck, cut into medium pieces
- 2 tablespoons mustard oil
- 1 teaspoon cumin seeds
- 2 bay leaves
- 4 green cardamoms
- 4 cloves
- 2 cinnamon sticks
- 2 onions, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tomatoes, chopped
- 2 potatoes, peeled and cut into quarters
- 2 cups water
- 2 tablespoons chopped coriander leaves

Method:

1. Wash and pat dry the duck pieces. Heat oil in a large skillet over high heat and fry the duck pieces in batches until golden brown on both sides. Drain and keep aside.
2. In the same oil, add cumin seeds, bay leaves, cardamoms, cloves and cinnamon sticks. Fry for a few seconds until fragrant.
3. Add onions and sauté until golden brown. Add ginger-garlic paste and fry for another minute.
4. Add turmeric powder, red chili powder and salt and mix well. Add tomatoes and cook until soft and mushy.
5. Add the fried duck pieces and potatoes and stir to coat with the masala. Add water and bring to a boil. Lower the heat and simmer, covered, for about 30 minutes or until the duck is tender and the gravy is thickened.
6. Sprinkle coriander leaves on top and serve hot with rice or roti.
