Orange kheer, also known as komolar kheer, is a delicious and refreshing dessert from Assam. It is made by reducing milk to a thick consistency and adding orange segments to it. The combination of creamy milk and tangy oranges is irresistible and perfect for any occasion. Here is how you can make this easy and exotic dessert at home.

Ingredients:
- 4 cups of full cream milk
- 1/4 cup of sugar
- A pinch of saffron
- A pinch of cardamom powder
- A pinch of cinnamon powder
- 2 large oranges or 8 mini oranges
- 2 tablespoons of chopped pistachios
Method:
1. In a heavy-bottomed pan, bring the milk to a boil over medium-high heat. Add the saffron, cardamom powder and cinnamon powder and stir well. Reduce the heat and simmer the milk, stirring occasionally, until it is reduced to half its original volume. This may take about 30 to 40 minutes.
2. Add the sugar to the milk and mix well. Turn off the heat and let the milk cool completely.
3. Peel the oranges and remove the seeds and white pith. Cut them into small segments and squeeze out the juice. You can also use a knife to remove the membranes and get only the flesh of the oranges.
4. Once the milk is cooled, add the orange segments and juice to it and stir gently. Refrigerate the kheer for at least an hour or until chilled.
5. Garnish with more nuts and orange zest if desired and serve cold or at room temperature.
