Ingredients:

- 3 large potatoes
- 3-4 green chilies, finely chopped
- 2 onions, finely chopped
- Few coriander leaves, chopped
- 2 tbsp mustard oil
- Salt to taste
- Water as required to cook the potatoes
- A pinch of turmeric powder

Instructions:

1. Peel the potatoes, roughly chop them and pressure cook for 2-3 whistles or you can normally cook them in a pot. Drain the cooked potatoes and let them cool down.
2. In a mixing bowl, add the potatoes and mash them smoothly. Add the chopped onions, green chilies, coriander leaves and salt. Mix well.
3. Heat mustard oil in a small pan and when it turns smoking hot, add turmeric powder. Whisk it quickly and pour it over the mashed potato mixture. Mix well again.
